A gas stove with convection is already commonplace. The convection version is gaining more and more popularity because it makes any dish even tastier.

Convection is a type of oven operation in which hot air circulates throughout the entire volume of the oven. The air moves through it under the influence of a special fan, which is mounted on the back wall. This mode allows you to create excellent baked goods, meat dishes and dry mushrooms or crackers.

Multifunctional CDs operate in 1-8 modes.

  1. Defrosting semi-finished products at room temperature.

The main element of the device is a powerful fan. When installing an additional heating element, the air moves more intensely and heats up faster. Such solid equipment allows you to perform the following culinary operations.

The flame temperature in a gas stove strongly depends on two factors:

  • chemical composition of the incoming gas mixture;
  • fuel supply intensity.

Dependence of temperature on fuel type

There are two types of gas used in everyday life: natural and liquefied. The gas itself is odorless and colorless, so for safety it is odorized. A special substance, ethanethiol (or ethyl mercaptan), is added to the gas mixture, which does not affect flammability, but has a sharp, specific odor. It is the smell of ethanethiol that people smell when a leak occurs.

Natural gas consists mainly of methane - about 97% of the total volume. The remaining 3% is represented by various mixtures, including ethyl mercaptan. It is natural gas that can reach temperatures of 1500 degrees.

Liquefied gas is used where it is not yet possible to install a gas pipeline. In this case, either a propane-butane mixture (65 to 35) or a butane-propane mixture (85 to 15) is poured into the cylinders under pressure. Such mixtures burn worse than methane, so the combustion temperature does not exceed 1000 degrees.

Due to the temperature difference, different equipment is used for each type of gas. Many manufacturers of gas stoves equip their models with special jets and gearboxes so that the stove can be easily converted from natural gas to liquefied gas. If you don’t use them and just connect the cylinders to the stove, it will begin to smoke heavily and constantly go out.

The main part of natural gas is methane (CH4) - from 70 to 98%. The composition of natural gas may include heavier hydrocarbons - homologues of methane[1]:

  • pentane (C5H12).

Natural gas also contains other substances that are not hydrocarbons:

  • hydrogen (H2),
  • hydrogen sulfide (H2S),
  • carbon dioxide (CO2)[1],
  • nitrogen (N2)[1],
  • helium (He) and other inert gases.

Pure natural gas is colorless and odorless. To make it easier to detect gas leaks, odorants are added in small quantities - substances that have a strong unpleasant odor (rotten cabbage, rotten hay, rotten eggs). Most often, thiols (mercaptans) are used as an odorant, for example, ethyl mercaptan (16 g per 1000 m³ of natural gas).

Natural gas is considered more environmentally friendly compared to coal, as it produces less CO2 emissions per unit of energy produced[2].
